Holy heck it's hot in Memphis and that makes me have little desire to cook. So I was trying to think of something yummy to make so I decided to make chicken salad and mmm, it is good!
Chicken, grapes, celery, pecans, bacon, fresh ginger, parsley and a few dashes of Worcestershire sauce mixed together equals a little bit of heaven.
Through the months of April-June, I didn't cook. It made me so sick. But my goal was to start cooking in July again. And so far I have. Sometimes I suck at it but I am trying. It rarely makes me sick and I am enjoying feeling like a good/decent wife again. July is a horrible month to cook in. So so so hot but we have to eat. And now that I'm not working we can't eat out as much because we have joined the ranks of being poor. But we are completely okay with that because I get to stay home and take care of our little one. I was asked not long ago if I could go back to work after the baby and my response even surprised me, "there's no way in hell I'll let someone else raise my child." I knew I wanted to be a stay at home mom, but I didn't know I felt that strongly.
Anyways, I'm going to go enjoy my oh so delicious chicken salad sandwich. I think I'll make some for when my in-laws are here. That will be a good light lunch.

I have C-R-A-V-E-D chicken salad this pregnancy and now that you've posted it I understand why. It IS crazy hot here in Memphis and a nice chicken salad sandwich just hits the spot. I guess it also makes sense why when I was pregnant with Sarah (in the winter) all I ever wanted was grilled cheese and tomato soup.
